Spiced Tofu

This tofu has a simple marinade with subtle but delicious flavor. This recipe was adapted from Abby Fisher's Spiced Round recipe found in her cookbook What You Should Know About Old Southern Cooking.



14oz package of extra firm tofu

2 tablespoons maple syrup

2 tablespoons apple cider vinegar

2 tablespoons canola oil

1 teaspoon sea salt

1/2 teaspoon allspice

1/2 teaspoon cloves

1/4 teaspoon cayenne pepper


Drain and press* the tofu to remove most of the moisture. Cut the tofu into desired pieces. I cut my block into four rectangles but it can be cut however you'd like. Combine all of the ingredients in a dish with a lid or zip lock bag. Marinate overnight or at least a few hours. You can cook these on the grill or bake them in the oven at 400 degrees. Bake for 20 minutes, flip, and then bake for an additional 20 minutes. Enjoy!





*Pressing tofu is the process used to remove extra moisture from the tofu. Typically when I press my tofu I wrap it in a few paper towels (or a clean dishtowel) and leave it underneath two giant dictionaries for about 10-15 minutes. Pressing the tofu will allow your tofu to soak up marinades a lot easier.
