Lemon pepper is one of my favorite dry seasonings and this recipe is the perfect way to satisfy cravings and get a good helping of veggies.
1 head of cauliflower, cut into florets
3/4 cup flour
1/2 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic power
1/4 teaspoon salt
1 cup soy milk
1 tablespoon apple cider vinegar
1/4 cup plant butter, melted
2 tablespoons lemon pepper seasoning
Preheat the oven to 375. Mix together the soy milk and apple cider vinegar. Set aside for 5 minutes. Mix together flour, paprika, onion powder, garlic powder, and salt. Add the milk mixture to the flour mixture. Line a baking sheet with parchment paper. Mix the cauliflower florets in the batter and space evenly on the baking sheet. Bake for 20 minutes. Add the lemon pepper seasoning to the melted butter in a large bowl. Toss the cauliflower in the lemon pepper butter. Adding more lemon pepper seasoning if needed. Place the cauliflower back in the oven for 20 minutes. Serve hot with dipping sauces of your choice.
